Sesame oil is the fat pressed from sesame seeds (Sesamum indicum), and it comes in two very different forms. Toasted sesame oil is a deep amber, intensely nutty and roasted oil used as a finishing seasoning — added off the heat at the end of cooking — and it is a backbone flavour of Chinese, Korean and Japanese kitchens. Light or untoasted sesame oil is pale gold and mild, a general-purpose cooking oil. The two differ not in pressing but in whether the seed is roasted first.
