The sea squirt — better known as the sea pineapple (hoya in Japan, meongge in Korea) — is a knobbly, red-orange tunicate that looks like a warty fruit anchored to the seabed. Prized for its singular taste, its firm orange flesh is eaten mostly raw and carries a briny, bitter-sweet flavour with a distinctive metallic-marine finish unlike any other seafood.
