Sazón is the annatto-coloured all-purpose seasoning blend of Puerto Rican and wider Latin American cooking — a fine, orange-red powder built on annatto (achiote), ground cumin and coriander, granulated garlic and salt, that both seasons and dyes rice, beans and stews a warm reddish-gold. Where dry adobo supplies a garlic-oregano savour, sazón adds the earthy, cumin-forward warmth and the signature colour, and the two are very often used together as the base of a dish.
