Sattu drink, or sattu sharbat, is a cloudy, cooling summer beverage of Bihar and the eastern Gangetic plain, made by whisking sattu — flour milled from dry-roasted chana (chickpea/Bengal gram), sometimes with roasted barley — into cold water. It comes in two classic forms: namkeen (salted), sharpened with lemon, roasted cumin, black salt, green chilli and often chopped onion and coriander, and meetha (sweet), sweetened with sugar or jaggery. Pale tan and faintly grainy, high in protein and famously filling, it is drunk by the litre through the fierce pre-monsoon heat as an instant, no-cook energy drink of the poor and rich alike. It is non-alcoholic, caffeine-free and, in its plain forms, vegan.
