Saltbush is the leaf of hardy, salt-tolerant shrubs of the genus Atriplex — most famously Australia's old man saltbush (Atriplex nummularia) — used as a savoury, naturally salty herb and seasoning. The mineral-rich grey-green leaves taste of the sea and the soil, and are dried, fried as a garnish, or ground into a spice blend.
