Salsa verde is the tomatillo-based green table sauce of Mexico, made by blending or crushing tomatillos with fresh green chillies (serrano or jalapeño), white onion, garlic and cilantro, then seasoning with salt and lime. Tart, bright and mildly to sharply spicy, it is one of the country's fundamental everyday sauces — spooned over tacos, enchiladas, eggs and grilled meat, and quite distinct from the unrelated Italian herb sauce of the same name.
