Salers is a French gentian apéritif from the Auvergne, made by macerating the wild yellow-gentian root of the region's volcanic highlands. Bottled at around 16% ABV, it is pale amber-gold, only lightly sweetened, and bracingly bitter and earthy — a rustic cousin of Suze, drunk chilled before a meal to sharpen the appetite.
