Sablefish (Anoplopoma fimbria), also sold as black cod or butterfish, is a deep-water fish of the North Pacific prized for snow-white, velvety flesh and one of the highest omega-3 contents of any white fish. Despite the "black cod" name it is not a cod; its buttery, oil-rich fillets are most famous miso-marinated in Japanese cooking.
