Spirit
White Rum
White rum — also called light or silver rum — is clear, light-bodied sugarcane spirit, distilled clean, briefly rested and filtered until colourless, with a crisp, faintly sweet character built for mixing. It is the workhorse base of the daiquiri, the mojito and the pina colada, carrying gentle notes of vanilla, soft sugarcane sweetness, coconut and fresh grass beneath a clean alcoholic snap.

Light, crisp and faintly sweet, white rum is the most restrained member of the rum family. It leads with a soft sugarcane sweetness and gentle vanilla over a clean, almost neutral spirit, with a touch of coconut and a fresh, grassy lift; there is little of the caramel, dried fruit and heavy oak of aged rums and only a whisper of the funky esters of pot-still styles. The texture is light and brisk with a clean alcohol snap at around 37.5 to 40 percent, and the finish is short, dry and refreshing — built to carry lime, mint and tropical fruit in a cocktail rather than to be brooded over neat.
