Dark Rum

Dark rum, also called black rum, is the richest and most full-bodied member of the rum family — a molasses-based spirit aged in heavily charred oak and deepened with caramel into a near-opaque mahogany, leading with bold notes of treacle, toffee, burnt sugar, ripe banana, coffee and warm baking spice, and standing as the muscular heart of tiki drinks, rum punch and the classic dark and stormy.

Richly sweet and warming, dark rum leads with treacle, molasses and burnt sugar over toffee and caramel, with ripe banana and dried fruit, coffee and bitter chocolate, vanilla and warm baking spice; heavy pot-still and Jamaican-style bottlings add a funky, high-ester banana-and-pineapple punch, while long oak ageing brings dried fruit, brown sugar and a mellow woody depth. The texture is full-bodied and spirituous with a warming alcohol burn at around 40 percent and upward, and the finish is long, sweet and oaky.
