Aged Rum
Aged rum — labelled anejo in the Spanish-speaking islands and rhum vieux in the French ones — is sugarcane spirit that has spent years resting in oak casks until its raw fire mellows into something smooth, dark and complex, all vanilla, caramel, dried fruit and warm spice. Sipped neat or over ice like a fine brandy, it is the contemplative end of the rum family, where the wood does as much of the talking as the cane.

Smooth, rounded and gently sweet rather than sugary, aged rum leads with vanilla and caramel drawn from the oak over toffee, dried fruit and brown sugar, with ripe banana carried up from the cane and a backbone of toasted, faintly tannic oak and warm baking spice. The texture is silky and warming at around 40 to 46 percent alcohol, drier and more savoury than light or spiced rum, with a long, mellow, woody finish that rewards slow sipping neat or over ice.
