Rosita

The Rosita is a tequila Negroni — reposado tequila built up with Campari, sweet vermouth and dry vermouth, stirred over ice with a dash or two of bitters and finished with a lemon twist. Softer and more nuanced than its gin-based cousin, it is a spirit-forward bitter aperitif that swaps juniper for the earthy, agave warmth of aged tequila, and it owes its modern fame to Gary Regan.

Pale ruby-amber, the Rosita smells of vivid bitter orange and aromatic Campari botanicals over the earthy, vegetal warmth of reposado tequila, with a wine-like vermouth depth and a clove-and-baking-spice lift from Angostura. On the palate it is intensely bittersweet — a rounding caramel sweetness from the vermouth and Campari set against a bracing rhubarb-and-orange bitterness — drier and more layered than a Negroni thanks to the split of sweet and dry vermouth, with a peppery agave warmth, a whisper of woody spice and a strong, dry, lingering bitter finish at around 24 percent alcohol in the glass.
