Rooibos (Afrikaans for "red bush", pronounced ROY-boss) is a herbal tisane brewed from the needle-like leaves and fine stems of Aspalathus linearis, a broom-like legume shrub found only in the fynbos of South Africa's Western Cape. Naturally caffeine-free and very low in tannin, the oxidised ("red") form brews to a deep red-amber liquor that is smooth, mildly sweet and woody-honeyed, with none of the briskness of true tea — which is why it is drunk plain, with milk, or as a base for lattes and iced drinks.
