Rocambole is the classic hardneck garlic (Allium sativum var. ophioscorodon), the type that throws up a coiling flower stalk, or scape, and packs its heads with a handful of large, easy-peeling cloves prized for the richest, most complex, deep-savoury flavour of any garlic.
