Jasmine rice — known in Thailand as khao hom mali, "fragrant jasmine rice" — is a soft, long-grain aromatic cultivar that cooks up moist, tender and gently clinging, perfumed with the warm popcorn-and-pandan scent of 2-acetyl-1-pyrroline. It is the everyday table rice of Thailand and much of mainland Southeast Asia.
