Remember the Maine
Remember the Maine is a rich, dark-crimson Manhattan variation — rye whiskey and sweet vermouth deepened with Cherry Heering and lifted by a whisper of absinthe, stirred over ice, strained up into a chilled coupe and garnished with a cherry. Recorded by Charles H. Baker in Havana in 1933 and named for the battleship USS Maine, it is a spirit-forward, faintly cherried and anise-scented cousin of the Manhattan.

Deep crimson and glossy, Remember the Maine opens with dark brandied cherry from the Heering and a cool green lift of anise and fennel from the absinthe, laid over the dry pepper and oak of rye whiskey and the herbal, faintly wine-like sweetness of sweet vermouth. On the palate it is spirituous and warming at around 30 percent alcohol in the glass — rye spice and toasted oak framed by rounded cherry and vermouth sweetness, with the absinthe threading anise through the middle and a long, dry, faintly bitter finish. Richer and darker than a Manhattan, it drinks like a sipping cocktail for the end of the evening.
