Ramos Gin Fizz

The Ramos Gin Fizz — also called the New Orleans Fizz — is a tall, creamy gin cocktail of the fizz family, built from gin, fresh lemon and lime juice, sugar, cream, egg white and a few drops of orange flower water, then shaken for an extraordinarily long time and topped with soda water. The long shake whips the egg white and cream into a dense, marshmallow-soft head that rises above the rim of the glass. It is a soft, cloud-pale drink — pale ivory, lightly sweet, tart and floral, gently aromatic with orange blossom and vanilla — and one of the great cocktails of New Orleans, famous for the punishing effort its foam demands of the bartender.

A tall, pale-ivory egg-white fizz of roughly 10 to 14 percent alcohol, soft and creamy with a dense foam head, tart with fresh lemon and lime and lightly sweet from sugar syrup. The gin lends a juniper backbone, the cream a silky body, and a few drops of orange flower water and vanilla perfume the whole drink with a delicate floral note. It finishes tangy and aromatic, with the citrus cutting through the richness rather than the drink reading heavy or sweet.
