Queso fresco ("fresh cheese") is a soft, mild, milky-white Mexican cheese made from cow's milk — moist and crumbly, faintly salty and tangy, and prized because it softens but does not melt or stretch when heated. It is the everyday table cheese of Mexico and much of Latin America, crumbled over antojitos rather than cooked into them.
