Queen's Park Swizzle
The Queen's Park Swizzle is a tall, minty Trinidadian rum cooler — aged demerara rum, fresh lime and sugar swizzled to a frost over crushed ice, then crowned with a dark float of Angostura bitters and a bouquet of mint. A swizzled, bitters-topped cousin of the Mojito, it is served long and frosty in a highball glass and drunk through the aromatic layer of bitters that rides on top.

Long and frosty over crushed ice, the Queen's Park Swizzle smells of cooling fresh mint and bright lime lifting off molasses-rich demerara rum, with a dark, spiced-bitter cap of Angostura aromatic bitters riding on top. On the palate it is tart and refreshing but warmly rummy underneath — lime and mint keep it lively and cooling, the demerara rum adds caramel and molasses depth, a measured sweetness from the simple syrup rounds it out, and each sip drawn up through the bitters float lands a bracing clove-and-cinnamon aromatic bitterness before a clean, cooling finish at around 20 percent alcohol in the glass.
