Puntarelle is the cluster of pale, hollow flowering shoots harvested from the heart of a Catalogna chicory (Cichorium intybus var. foliosum) — a crisp, faintly bitter winter vegetable that is the centrepiece of the classic Roman salad puntarelle alla romana.
