Pumpkin seed oil is the dark, intensely nutty finishing oil pressed from roasted pumpkin seeds — most famously the hull-less Styrian oilseed pumpkin of south-eastern Austria, Slovenia and Hungary. Inky green-black in the bottle and a vivid red-green by transmitted light, it is drizzled raw over soups, salads, cheeses and even vanilla ice cream, never used to fry. It is a protected European speciality known in German as Kürbiskernöl.
