Prime rib, or standing rib roast, is the whole bone-in rib primal of beef (Bos taurus) roasted intact — a marquee celebration cut built around the same tender eye of longissimus dorsi that yields the ribeye steak. Heavily marbled and roasted on its rib bones, it is prized as one of the richest, juiciest and most impressive of all roasts.
