A poussin is a very young chicken, slaughtered at around four to six weeks old and weighing only 400–500 g, making a single tender bird a natural individual serving. Delicate, mild and quick-cooking, it is a small luxury roasting fowl prized in French and British cooking, and is closely related to — and often sold as — the American Cornish game hen.
