Kennebec is the classic American all-purpose white potato — a large, smooth, pale-tan-skinned tuber with white flesh and a medium-starch flesh that fries into long, crisp, golden chips. Bred by the USDA in the 1940s, it is the potato behind many a roadside fry stand and the home gardener's reliable workhorse.
These cues are Potato's, and hold across its varieties; where this one differs, its own page says so.
