Port-Salut is a French semi-soft, washed-rind cow's-milk cheese — a small flat round with a smooth, edible bright-orange rind and a pale, supple, ivory paste. It is mild, creamy and faintly tangy, far gentler than its glowing rind suggests, and is an easy-eating table, sandwich and snacking cheese.
