Pork jowl is the cheek and jaw of the pig — a small, marbled cut taken from the lower face, layered with soft fat through a streak of lean muscle. Rich, gelatinous and intensely porky, it is fried as a soul-food staple in the American South and dry-cured into Italy's prized guanciale, the traditional fat of carbonara and amatriciana.
