A ham hock (or pork knuckle) is the joint at the lower leg of the pig, between the meaty shank and the foot — the equivalent of the ankle. Heavily worked, tough and rich in skin, fat, tendon and collagen, it is most often cured and smoked, then simmered for hours to flavour soups, braises and bean dishes.
