Pork belly is the boneless, fatty cut from the underside of the pig (Sus scrofa domesticus), running from behind the front legs to the hind. Prized for its thick, alternating bands of lean meat and creamy fat, it is the source of bacon and pancetta and the star of dishes from Chinese hong shao rou to Korean samgyeopsal and Filipino lechon kawali.
