Pont-l'Évêque is a soft, washed-rind cow's-milk cheese from Normandy in northern France, instantly recognisable by its square shape. Beneath a fine, pale-gold to orange washed rind the supple ivory paste is tender and creamy, faintly springy when young and yielding when ripe. Its flavour is rich and savoury with a tangy, milky depth and a gentle barnyard funk — far milder than its aroma suggests — making it one of the oldest and most approachable of France's washed-rind cheeses.
