The pomelo (Citrus maxima) is the largest of all citrus fruits — a thick-rinded, pith-heavy giant native to Southeast Asia, pale green to yellow, the size of a small melon and weighing up to a kilo or more. Beneath an enormous cushion of spongy white pith lies sweet, mild flesh, only faintly bitter, made of large firm juice vesicles that pull cleanly away from their membranes. One of the three foundational citrus species and the wild ancestor of the grapefruit, it is eaten fresh, tossed into Thai and Vietnamese salads, and dipped in chilli-salt.
