Pollock is a slender, fast-swimming North Atlantic whitefish of the cod family (genus Pollachius), lean and mild with a soft, large-flaked white flesh. Cheaper and once humbler than cod, it has become a workhorse of the modern kitchen — the fish behind countless fish fingers, much fast-food fish, and the surimi pressed into imitation crab.
