The Santa Rosa is the most famous of the Japanese plums (Prunus salicina), bred by Luther Burbank in the early 1900s on his Sebastopol and Santa Rosa farms in California and named for the town. A medium-to-large, heart-round drupe, it wears a deep crimson-to-purple skin dusted with a pale silvery bloom, and cuts to juicy amber-yellow flesh that flushes red toward the stone. Its signature is a rich, honeyed sweetness set against a bright, tangy, almost tart skin — a balance that made it the benchmark fresh-eating plum of the American twentieth century.
