The Italian prune plum is a small, oval, deep blue-purple European plum (Prunus domestica) grown above all for drying and baking. Its taut indigo skin, dusted with a pale powdery bloom, encloses firm amber-green flesh that pulls cleanly from the stone and tastes sweet with a clean tart edge. Denser, less juicy and higher in sugar than a dessert plum, it holds its shape under heat and dries without fermenting — making it the classic plum of the German Zwetschgenkuchen and the late-summer prune-plum tart, as well as a home- and commercial-drying staple.
