Planter’s Punch

Planter’s Punch is the classic Caribbean rum punch — dark Jamaican rum balanced by fresh lime, sugar and water or fruit juice, lengthened over crushed ice and finished with Angostura bitters and grated nutmeg. It is the archetypal single-serving version of the old plantation punch, built to the bartenders’ rhyme "one of sour, two of sweet, three of strong, four of weak." Tall, amber and aromatic, it is at once strong and refreshing — funky molasses rum cut with sharp lime and softened by sugar, the spice of bitters and nutmeg lifting it. It is one of the defining rum drinks of the tropics and a long-time fixture of the International Bartenders Association list.

A long, amber rum punch of roughly 12 to 16 percent alcohol, built on the high-ester funk of dark Jamaican rum and balanced by sharp fresh lime and brown-sugar sweetness. Angostura bitters and freshly grated nutmeg lay warm baking-spice and a faintly bitter edge over the top, while ice and water lengthen the drink so it reads strong but refreshing. The finish is aromatic and lightly tannic, molasses and citrus carried by spice rather than left sweet.
