Pisco Sour

The Pisco Sour is a South American sour built on pisco — the grape brandy of Peru and Chile — shaken with fresh citrus juice, simple syrup and egg white, then served up with a thick white foam cap. In the Peruvian style it is finished with a few drops of Angostura bitters dotted on the foam, which perfume the first sip. It is a cloudy ivory drink, sharp and bright with citrus, lightly sweet, and silky from the egg-white froth. Both Peru and Chile claim it as their national drink, and it is one of the most celebrated cocktails of the Americas.

A cloudy ivory shaken sour of roughly 20 to 25 percent alcohol, tart-led and bright with fresh lime or lemon over the fruity, grappa-like character of pisco. The egg white gives a silky, foamy body and a thick white cap, while the few drops of Angostura bitters add a band of clove-and-cinnamon spice and a faint bitterness across the first sip. The drink finishes dry and aromatic, citrus-forward and lightly sweet rather than sugary.
