Pisco
Pisco is the clear grape brandy of Peru and Chile, distilled from aromatic wine grapes and bottled unaged, so that nothing stands between the drinker and the flower-and-fruit perfume of the grape. Floral, grapey and faintly herbal, it is sipped neat in its homelands and is the soul of the pisco sour, the frothy, citrus-bright cocktail both countries claim as their own.

Dry, fragrant and clean, pisco leads with fresh grape and muscat blossom over orange and lemon peel, a lift of green herb and a whisper of spice, with none of the vanilla, caramel or oak of an aged brandy. The texture is light and spirituous with a clear, warming alcohol burn at around 38 to 48 percent, and because it is bottled unaged the finish is short, bright and grapey rather than long and woody, which is what makes it sing in the citrus-and-foam of a pisco sour.
