Pimento Dram
Pimento dram, also called allspice dram, is a dark, intensely spiced Jamaican liqueur made by steeping allspice berries — the dried fruit of Pimenta dioica, known in Jamaica as pimento — in rum, then sweetening the infusion; the result tastes vividly of clove, cinnamon and nutmeg all at once, the very reason the English called the berry "allspice."

Deep reddish-brown and syrupy, pimento dram leads with a penetrating clove-and-allspice aroma — driven by eugenol, the phenol it shares with clove — layered with cinnamon, nutmeg and black pepper over the molasses warmth of Jamaican rum and brown sugar. The palate is intensely sweet and spiced, with a warm, almost medicinal baking-spice bite that turns peppery and drying on a long finish. It is powerful and concentrated, meant to season a drink a dash at a time rather than to be sipped in volume, where the clove can become overwhelming.
