Pecorino is the family of hard Italian cheeses made from sheep's milk — the name comes from pecora, Italian for ewe. Firm, dense and pale straw-yellow inside a hard tan rind, it is salty, sharp and tangy, with a nutty, almost piquant bite that deepens as the cheese ages. Most famous in its long-aged grating forms, it is the cheese melted into cacio e pepe and showered over carbonara and amatriciana.
