The Forelle is the prettiest of the winter pears — a small, dainty, bell-shaped fruit whose smooth yellow-green to gold ground is sprinkled all over with vivid crimson-red freckles, the lenticels that give it its name (Forelle is German for trout, and the speckled skin recalls a trout's flank). As it chills and ripens the freckles deepen and a rosy red blush spreads across the sun-facing cheek, so the fruit grows steadily more colourful in storage. Inside it is crisp, very sweet, juicy and clean-tasting, sized to be eaten whole out of hand.
