The Concorde is a modern British dessert pear that splits the difference between its two famous parents — it has the long, narrow, conical neck of a Conference and the rich, honeyed sweetness of a Comice. The skin is green-gold, dusted over the shoulders and neck with a fine, light tan russet, and the cream-coloured flesh is dense, firm and very sweet with a distinct vanilla scent. Unusually for a pear it is slow to brown once cut and it holds its shape when cooked, so it is as happy sliced raw onto a board as it is poached or baked.
