Peanut oil, also called groundnut oil or arachis oil, is the fat pressed from the seeds of the peanut (Arachis hypogaea). Most of what reaches the kitchen is a clear, pale-gold refined oil that is almost flavourless and prized for deep-frying because of its high smoke point and clean taste; a separate, unrefined roasted style is amber and intensely nutty, used as a finishing and stir-fry oil in Chinese and other Asian cooking.
