Peanut butter is a thick, rich paste made by roasting and grinding peanuts (Arachis hypogaea), usually with a little salt, sometimes a touch of sugar, and often a stabiliser to stop the oil separating. The grinding shears the roasted kernels until their own oil is released and the mass turns smooth and spreadable — savoury-sweet, deeply nutty and very energy-dense. It is eaten as a spread, stirred into sauces and baked into sweets, and is one of the most popular ways the world eats the peanut. Per gram it is one of the most calorie-dense everyday foods, but it is also high in plant protein and unsaturated fat.
