The white peach is a peach with creamy white-to-pale-pink skin and white flesh whose defining trait is how little acid it carries. Where a yellow peach balances sugar against a bright tang, a ripe white peach reads as purely, delicately sweet — soft, perfumed and floral rather than sharp — which is why it is the peach of choice across much of East Asia and a favourite of anyone who finds ordinary peaches too tart.
