The cling (clingstone) peach is the canner's peach: a firm, golden-yellow fruit whose dense flesh grips the stone so tightly it must be cut away, the very trait that lets it hold its shape in the can and the jar. Sweeter and less acid than fresh-market freestones, it is the variety behind nearly every tinned peach half and slice in the world.
