Pea shoots are the young seedlings of the garden pea (Pisum sativum), grown as a microgreen and harvested only one to three weeks after sowing — a tangle of tender stems, soft leaves and curling tendrils cut a few centimetres above the soil. Eaten raw as a garnish or salad green, they carry a remarkably concentrated, pure sweet-pea flavour in a single delicate snip.
These cues are Pea's, and hold across its varieties; where this one differs, its own page says so.
