Pâte de fruit — literally "fruit paste," and known in English as fruit jelly or fruit gelée — is a firm, glistening confection made by boiling fruit purée with sugar and pectin down to a high solids concentration, then setting it, cutting it into small squares or discs and rolling them in granulated sugar. A classic of the French confiseur's counter, it is intensely fruity and jewel-bright, the candy that tastes most directly of the fruit it is made from.
