Micro parsley is the microgreen stage of the common parsley plant (Petroselinum crispum) — slender seedlings harvested at just a few centimetres tall, when the first feathery true leaf has appeared above the pair of narrow seed leaves. Despite its delicate size it carries a remarkably pure, concentrated fresh-parsley flavour, and it is used raw as a fine, elegant garnish, salad green and plating accent.
