Paprika is the deep-red ground powder of dried, ripe Capsicum annuum peppers — the same species that gives the world bell peppers and chillies — milled to a fine, vivid dust that ranges from barely-warm "sweet" to gently fiery. Born in the Americas but perfected in Hungary and Spain, it smells fruity and faintly sweet, like a sun-dried red pepper, with an earthy, slightly woody undertone. Its job in the kitchen is colour and warmth more than fire: it stains goulash and chicken paprikash a glowing scarlet, tints Spanish chorizo and rice dishes, and dusts everything from deviled eggs to roast potatoes. The oak-smoked Spanish style, pimentón de la Vera, adds a deep campfire smokiness that has become a flavour signature all its own.
