Paper Plane

The Paper Plane is a modern-classic whiskey sour built from four equal parts — bourbon, Aperol, Amaro Nonino and fresh lemon juice — shaken hard and strained ice-cold into a stemmed cocktail glass. It is an amber-orange drink, bittersweet and bracing: the rich grain of bourbon set against the bitter-orange lift of Aperol, the herbal complexity of Amaro Nonino and the sharp acidity of lemon. Created in New York in 2008 by the bartender Sam Ross as a riff on the Last Word, it became one of the defining cocktails of the modern craft revival and was added to the International Bartenders Association's official list in 2020.

An amber-orange shaken sour of roughly 20 to 25 percent alcohol, bittersweet and complex, with the warm oak and vanilla of bourbon set against the bitter-orange brightness of Aperol and the layered herbal, caramel and citrus-peel bitterness of Amaro Nonino. Fresh lemon juice draws it taut, so the drink is fruity and aromatic up front, herbal and gently bitter through the middle, and dry on the finish. The four equal parts balance one another, giving a cocktail that is rich yet refreshing rather than sweet or simply sour.
