Pálinka
Pálinka is Hungary's national fruit brandy, double-distilled from 100 percent fresh fruit mash — most famously plum, apricot, pear and cherry — with no added sugar, colouring or flavouring, and released clear and intensely aromatic. Legally protected to Hungary and four Austrian provinces for the apricot version, it is a pure, orchard-driven eau-de-vie that captures the smell of ripe fruit in liquid form.

Clean, warming and faintly sweet, Pálinka bursts with the pure aroma of its base fruit — ripe plum, apricot, honeyed pear or tart cherry — lifted by fresh-cut orchard notes, a whisper of blossom and a bittersweet stone-fruit kernel that recalls marzipan. There is no oak, sugar or colouring to mask it, so the spirit reads bright and transparent, with a fragrant esters-forward nose that fills the glass. The body is spirituous and warming at around 40 to 50 percent, best chilled to focus the fruit, and the finish is long, clean and unmistakably fruity, tailing into a gentle warmth.
